Le prix va de 2 000-8 000 € pour une cuve d'occasion de petite capacité à plus de 50 000 € pour une cuve double enveloppe de grande capacité avec agitateur et régulation de température. Durée de vie de 15 à 25 ans, l'inox résistant très bien à la corrosion, l'agitateur et les joints étant les éléments nécessitant le plus d'entretien. Nécessite une alimentation électrique pour l'agitateur, un raccordement vapeur ou eau glacée pour la régulation de température selon le modèle, et un espace au sol suffisant pour la manutention.
